Chocolate Dipped Stars

Ingredients
- 1 cup (2 sticks) unsalted butter, softened
- 1/2 cup granulated sugar
- 2 tsp vanilla extract
- 3 large egg yolks
- 2 1/2 cups cake flour, sifted
- 1 large egg
- Pinch of salt
- 1 pound bittersweet or semisweet chocolate, melted in a double boiler
Instructions
- In large bowl, with electric mixer at medium speed, beat butter and sugar until light and fluffy
- Beat in vanilla
- Add Yolks, one at a time, beating until batter is very smooth after each addition
- At low speed, gradually add cake flour, mixing just until flour is incorporated
- Scrape dough onto a piece of plastic wrap. Shape into a disk, wrap tightly, and refrigerate about 3 hours, or until firm
- Preheat oven to 325 (F). Line two baking sheets with parchment paper
- Lightly flour a work surface. Unwrap chilled dough and roll it out to a scant 1/4-inch-thick round. In small bowl, whisk together egg and salt. Paint dough with egg wash and randomly score with a fork. Using a 2-inch star or heart shaped cutter, cut out cookies and place 1 inch apart on prepared pans
- Bake 15 minutes, or until cookies begin to brown around edges. Cool on baking sheets on wire racks
- Once cookies are completely cooled, dip half of each cookie into chocolate; place cookies on parchment paper to dry. Store cookies in a cool place in a tin or plastic container with a tight-fitting lid.
